Week 173

Boo boos! I am doing Whole30. Overall, it's been okay. Today, I'm tired. But yesterday, I felt great. Even went on a run! Maybe it's the fact that I knew I had to grocery shop and make a meal plan that is causing the exhaustion. The Instant Pot has proven to be a true friend during this ordeal. Not only am I on Whole30, BUT the oven died. So roasting veggies is a combination of time and prayer. The broiler works, and the heating element sort of works, and sometimes does not, and sometimes goes too high. It's a gamble. We are getting a new one next week. So until then we are, as Bon Jovi says, "livin' on a prayer" and granting the Instant Pot sainthood status.

Here are the meal BBs:

IP Chicken and Gravy + Roasted Veggies (praying)

Zoodles and Tomato Sausage sauce + Greens

Burritos (for the boys) and Taco Salad (for me) using IP Taco Meat

IP Chicken Breasts + Sweet Potatoes

Italian Pork Sausage and Greens over Spaghetti Squash (when the wildlings have pizza night)

Salmon Cakes + Broiled Asparagus
